Domenica's Egg Muffin on the Go

Since I am NOT a morning person, I like simple recipes that I don’t have to think through and that don’t have many steps. With that said, if you feel like eggs are too much to tackle in the a.m., let me assure you, this recipe is quick, painless, and will provide you with valuable protein. My “secret” ingredient is a pinch of granulated garlic. It adds a significant boost of flavor. Everyone always wants to know how my simple scramble is so good, now you know.

Per person

Ingredients:
2 eggs, cracked into a small bowl (or one whole egg and two whites)
Dash kosher salt and fresh cracked pepper
Generous pinch of granulated garlic (make sure it is not powdered garlic or garlic salt)
Drizzle of extra virgin olive oil
Toasted whole grain English muffin

Process:
1. Heat a skillet with a generous drizzle of extra virgin olive oil.
2. Whisk together eggs, salt, pepper and garlic.
3. Add to pan and continuously stir until cooked (no more than 2 minutes…they will become overly dry if you cook too long).
4. Toast the whole grain muffin and make a sandwich.
