Grilled Summer Fruit

Eat this delicious fruit with grilled pork or lamb, or as a simple dessert served over a heaping scoop of your favorite ice cream.

Ingredients:
4 medium apricots, or 2 large peaches, (or nectarines or plums), halved and pits removed
1 tablespoon honey (or more to taste)
1/4 tablespoon mint, minced
Splash, extra virgin olive oil
Splash, balsamic vinegar

Process:
  1. Heat grill or grill pan.
  2. Brush fruit with a bit of extra-virgin olive oil. Place center side down on grill.
  3. Cook until soft, about 5-7 minutes.
  4. Finish with a drizzle of honey and fresh mint.
