Grilled Summer Skewers

Grilled Summer Skewers

This is a terrific way to keep heat out of the kitchen.

Serves 4-6

Ingredients:
1-2 cups of wood smoking chips
1.1½ pounds beef stew meat or peeled and de-veined shrimp or a mixture
1-2 ears of corn, cut into 1 ½ inch circles
1 cup cherry tomatoes
1 cup crimini or button mushrooms, bottoms removed
2 medium or 1 large zucchini cut into 2 inch pieces
Salt and pepper
Splash of extra virgin olive oil
One lemon or lime, juiced
*Spice mix of choice, (meat seasoning, curry spices, latin spices, etc), optional
Wood or metal skewers (if using wood make sure to soak in water for 10 minutes so they don't burn on the grill)

Process:
  1. Heat your grill to high and add a foil pouch of wood chips.
  2. While grill is heating, put beef or shrimp and all the vegetables in a large bowl or large plastic resealable bag. Generously coat with salt, pepper, lemon, a drizzle of olive oil and spice mix if using.
  3. Let sit for 5-10 minutes to add flavor. Alternately skewer the meat and veggies. Place on the grill and turn the heat down to medium high. Cook for 5-7 minutes.
  4. If you have extra, refrigerate and serve as a chopped salad the following day by adding 2 chopped Romaine hearts and your dressing of choice.
