New Year's Black Eyed Peas

New Year's Black Eyed Peas

Ingredients:
4 cups fresh or frozen black eyed peas
½ cup shallot or yellow onion, minced
3 cloves garlic, minced
3 tablespoons extra virgin olive oil
1 teaspoon (or more if you want it spicier) chili flakes
2+ cups broth or water
2 tablespoons minced fresh parsley
Salt and pepper to taste
*Two slices natural bacon cut into small pieces (*optional)

Process:
  1. Sauté the onion and the chili flakes in the olive oil over medium heat until the onion begins to soften. (If using bacon sauté first before the onion then remove and set aside)
  2. Add garlic and cook for a few more minutes.
  3. Add black eyed peas and sauté for a few more minutes. Add ½ the broth.
  4. Cook for about 35 to 40 minutes and test for salt.
  5. Add more broth or water as needed, cook until done and finish with fresh herbs.
