Ultimate Egg Salad

Ultimate Egg Salad

Ingredients:
6 eggs, hardboiled (see below for tips)
2 tablespoons dried or fresh dill, basil or cilantro
1 tablespoon extra virgin olive oil
1 tablespoon pickle juice
1 tablespoon mayonnaise
Salt and pepper
*1/4 cup minced fresh celery, onion and/or jalapeno (*optional)
*multigrain bread (*optional)

Process:
  1. For the ultimate hard boiled eggs, place eggs in a pan covered by one inch of water. Do not layer them.
  2. Bring water to a boil then shut off heat.
  3. Leave eggs for 10 minutes in water then rinse with cold water.
  4. In the meantime, place all ingredients except eggs in a medium bowl and stir together.
  5. Peel and roughly chop the eggs. Add to the mixture. Serve on multigrain bread. Refrigerate leftovers (will keep up to three days).
