 Grilled Summer SkewersThis is a terrific way to keep heat out of the kitchen.Serves 4-6 Ingredients: 1-2 cups of wood smoking chips 1.1½ pounds beef stew meat or peeled and de-veined shrimp or a mixture 1-2 ears of corn, cut into 1 ½ inch circles 1 cup cherry tomatoes 1 cup crimini or button mushrooms, bottoms removed 2 medium or 1 large zucchini cut into 2 inch pieces Salt and pepper Splash of extra virgin olive oil One lemon or lime, juiced *Spice mix of choice, (meat seasoning, curry spices, latin spices, etc), optional Wood or metal skewers (if using wood make sure to soak in water for 10 minutes so they don't burn on the grill) Process:
