Mom-a-licious Summer Potato Salad

My mom gave me the idea for this great summer salad. Chopping the potatoes really fine is what I think makes this salad so delicious. There is a one-step chopper sold at many super stores that is a great addition to your basic kitchen tools and can make chopping so much easier.

Ingredients:
1 1/2 pounds Yukon gold or russet potatoes, peeled
2 celery ribs
½ small onion, like Vidalia or use a whole medium shallot
2-3 hardboiled eggs, peeled
1/4 cup regular mayonnaise or extra virgin olive oil
1 tablespoon pickle juice
¼ cup chopped fresh herbs such as basil, dill, parsley or a mix
Salt and pepper to taste
*4 cups chicken broth (*optional, you can boil potatoes in the broth instead of water for a richer flavor)


Process:

  1. Place potatoes in a saucepan and cover with water or broth, bring to a boil.
  2. Reduce heat; cover and simmer for 20-30 minutes or until tender. Drain and cool.
  3. Chop the celery, onion, and eggs finely. Place in a large bowl.
  4. Chop the potatoes very small. Add to the celery mix.
  5. Add the mayonnaise or oil pickle juice, herbs and salt and pepper. Cover and refrigerate for at least 1 hour.
