Balsamic Roasted Chard

Chard is one of those intimidating vegetables for many of the moms I teach. Once you make this recipe, all fear will be gone! It is one of the most vitamin rich veggies, packed with vitamin C and iron. I have had many skeptics transformed by this simple and delicious preparation.

Ingredients:
1-2 heads Swiss chard, chopped in 1-2 inch strips with tough ribs removed
Drizzle extra virgin olive oil
Pinch, kosher salt
Splash, balsamic vinegar

Process:
Heat oven to 450 degrees

Lay chopped chard out on a sheet pan.
Drizzle with extra virgin olive oil until chard is lightly coated. Sprinkle with kosher salt.
Roast for approximately five minutes.
Remove and drizzle with balsamic vinegar to taste.
