Balsamic Roasted Chard

Chard is one of those intimidating vegetables for many of the moms I teach. Once you make this recipe, all fear will be gone! It is one of the most vitamin rich veggies, packed with vitamin C and iron. I have had many skeptics transformed by this simple and delicious preparation.

Ingredients:
1-2 heads Swiss chard, chopped in 1-2 inch strips with tough ribs removed
Drizzle extra virgin olive oil
Pinch, kosher salt
Splash, balsamic vinegar

Process:
Heat oven to 450 degrees

  1. Lay chopped chard out on a sheet pan.
  2. Drizzle with extra virgin olive oil until chard is lightly coated. Sprinkle with kosher salt.
  3. Roast for approximately five minutes.
  4. Remove and drizzle with balsamic vinegar to taste.
