Pistachio Yogurt Chicken with KaleThis is a healthy and easy one-dish dinner. It is a fun twist on a chicken dish that will break the weeknight blahs!Ingredients: 2/3 cup raw pistachios, shelled 3 cups plain low or non-fat Greek or regular yogurt 1/2 white or yellow onion, cut into big chunks 3 cloves garlic, peeled 2 teaspoons ground cumin 2 teaspoons mild curry powder 1-2 inch piece of fresh ginger, peeled and cut into a few pieces 1 bunch fresh cilantro 1 teaspoon salt, plus more to taste 1 pound of boneless skinless chicken breasts or tenders, cut into two-inch pieces 1 tablespoon extra virgin olive oil 2 cups chopped fresh kale or baby spinach Process:
