Mom-a-licious Frittata

This simple recipe can be doubled (or tripled) to fill a large baking dish to serve for a group breakfast. Make it your own by using your favorite cheese, veggies, and/ or bacon and sausage.

Serves 4-6

Ingredients:
6 free range eggs
½ cup organic Greek yogurt
2 tablespoons fresh chopped herbs such as thyme, Italian parsley, chives or a mix
1/3 cup grated cheese, such as sharp cheddar or pepper jack
¼ cup baby tomatoes, cut in half length wise
2 tsp salt
Fresh pepper to taste
Extra virgin olive oil

Process:
Preheat oven to 400 degrees.

1. Crack eggs into a large measuring cup or bowl.
2. Add the yogurt, herbs, cheese, thyme, salt and pepper and whisk together.
3. Oil a small baking dish (you can also use 4-6 small ramekins).
4. Pour in egg mix. Top with tomatoes.
5. Bake for 10 minutes if using a single serving size, 15 minutes if using a 5×7 baking dish.
6. Turn oven to broil and finish for 2-5 more minutes. Remove from oven when the eggs start to get a nice, golden color.
